Recipes for Good Food Habits

Spicy Potato Salad

400g small potatoes, skin on
1 Tbsp sesame oil
1 Tbsp sesame seeds
1 tsp mustard seeds
2 Tbsp fresh ginger, grated
1Tbsp chili sauce or 1 tsp crushed chili
2 Tbsp lemon juice
2 spring onions
6-8 button mushrooms

Boil the potatoes and leave to go cold.
Cut into even sized small pieces.
Heat oil and add seeds and ginger. Saute 2-3 mins
Add mushrooms.
Add potatoes, spring onions, chili sauce and lemon juice. Mix well.
Serve warm
