1 cup peeled and sliced feijoas
¾ cup sugar
50g margarine
1 cup boiling water
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 egg
In a pot large enough to hold all the ingredients add the feijoas, sugar, margarine and water.
Bring to the boil and then simmer for 5 minutes.
Cool.
Stir in the baking soda.
Mix in the egg well.
Gently stir in the flour and baking powder.
Bake in a loaf tin for 50 minutes at 180ºC.
Cool for 5 minutes in the tin then turn out onto a wire rack.
Once cold, cut into approximately 10 slices.
