3 bacon rashers (optional)
1 cup tasty cheese
½ cup milk
salt and pepper
1 cup flour
1 teaspoon baking powder
Preheat oven to 180C.
Finely dice the onion.
Remove the rind from the bacon and dice into approximately 1cm squares.
Grate the courgette, carrot and cheese.
In a large bowl whisk the eggs and milk together.
Add the onion, bacon, vegetables, cheese, salt and pepper. Mix well.
Gently mix through the flour and baking powder.
Lightly grease a flan dish or muffin tin.
Cooking time for flan dish is approximately 40 minutes. Muffins will cook in approximately 20 minutes.
When cooked it will puffed up and the large dish will turn golden brown on top, the muffins won't. If the mixture is still liquid in the middle, cook for a further 5-10 minutes.
* carrots and courgettes can be replaced or used in addition to mushrooms, capsicum or spinach
