Recipes for Good Food Habits

Tom Yum Soup

3 cups water
1-2 stalks lemon grass, crush and cut into 3cm length
Kaffir lime leaves, fresh if you can find them otherwise dried
1 onion, sliced
1 tomato, sliced
5 white mushrooms, sliced
1 Tbsp chicken stock powder
1 tsp sugar
1 Tbsp fish sauce
3 Tbsp lemon juice
1 fresh chili
coriander leaves
200g chicken breast

Boil water and add lemon grass, kaffir lime leaves and vegetables. Leave uncovered.
Add chicken stock, fish sauce, lemon juice, sugar, chilies and chicken.
Adjust the flavour to suit taste. Should taste spicy and sour.
As soon as the chicken is cooked, serve garnished with coriander leaves.
